Bacon-Tomato Bake

Bisquick® open-face sandwich with cheesy bacon and tomato topping - delicious and simple.
Ingredients:
  • 1 1/4 cups Original Bisquick™ mix
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup water
  • 1/2 lb bacon, cooked, crumbled
  • 1/2 large onion, thinly sliced
  • 3 tablespoons chopped fresh cilantro or parsley
  • 1/4 teaspoon ground red pepper (cayenne), if desired
  • 1 large tomato, cut into about 6 slices
  • 1 cup shredded Cheddar cheese (4 oz)
  • Additional chopped fresh cilantro or parsley, if desired
Instructions:
  • Preheat oven to 400°F. Grease a 9-inch square pan generously with shortening. Mix Bisquick, Parmesan cheese, and water in a medium bowl until moistened; spread in the bottom of the pan. Bake for 12 minutes.
  • Combine the bacon, onion, 3 tablespoons of cilantro, and red pepper in a medium bowl. Spread this mixture over the partially baked dough. Layer tomato slices on top of the bacon mixture and then sprinkle with Cheddar cheese.
  • Bake for 15-20 minutes until the edges are golden and the cheese is melted. Allow to cool for about 5 minutes, then serve warm and sprinkle with extra cilantro.
