Creamy gnocchi, chicken and semi-dried tomato bake

Family-favorite dish: Crunchy, creamy, and comforting - guaranteed to impress!
Ingredients:
  • 1 small brown onion, halved, thinly sliced
  • 175g packet rindless shortcut bacon rashers, sliced
  • 500g chicken breast fillets, cut into 2cm cubes
  • 11.80 gm wholegrain mustard
  • 2 garlic cloves, crushed
  • 187.50 ml drained semi-dried tomatoes
  • 127.50 gm chicken style liquid stock
  • 252.50 gm pure cream
  • 500g packet gnocchi
  • 125.00 ml fresh basil leaves, torn
  • 250.00 ml fresh breadcrumbs
  • 250.00 ml grated tasty cheese
  • Small fresh basil leaves, to serve
  • Semi-dried cherry tomatoes, optional
Instructions:
  • Preheat the oven to 200°C/180°C fan-forced. In a large frying pan over medium-high heat, sauté onion and bacon in oil until onion is softened and bacon is golden, about 5 minutes. Add chicken and cook until browned all over, about 5 more minutes.
  • Combine mustard, garlic, and tomatoes in the pan. Stir and cook for 1 minute. Add stock and cream. Simmer until it thickens. Take off the heat and mix in gnocchi and basil. Season with pepper to taste.
  • Transfer the mixture into a 12-cup baking dish. Mix breadcrumbs and cheese, then sprinkle over the gnocchi. Bake until golden on top, around 20 minutes. Let it rest for 5 minutes, then serve with basil and semi-dried tomatoes, if desired.
