Indulge in comforting creamy chicken gnocchi soup bursting with colorful veggies, tender pasta, and savory rotisserie chicken.
Ingredients:
  • 0.25 cup butter
  • 1 tablespoon extra-virgin olive oil
  • 1 large zucchini, diced
  • 2 stalks celery, diced
  • 0.5 red bell pepper, diced
  • 2 carrots, shredded
  • 0.25 cup all-purpose flour
  • 3 cups chicken broth, or more as needed
  • 1 cup half-and-half
  • 1 pint fat-free half-and-half
  • 2 cups shredded rotisserie chicken meat
  • 1 (16 ounce) package small gnocchi
  • 2 cups torn fresh spinach
  • 0.5 teaspoon ground thyme
  • 0.25 teaspoon freshly grated nutmeg
  • salt and ground black pepper to taste
Instructions:
  • In a large soup pot over medium heat, melt butter with olive oil. Sauté zucchini, celery, onion, red bell pepper, carrots, and garlic in the butter-oil mixture until vegetables are soft, about 8 to 10 minutes. Sprinkle flour over the vegetables and cook for an additional 2 minutes.
  • Add chicken broth to the pot and stir until the flour paste is fully blended, creating a thick and smooth soup, approximately 5 minutes. Next, pour in both types of half-and-half and bring the mixture to a gentle simmer. Continue cooking until the soup slightly thickens, for about 5 more minutes.
  • Combine the chicken, gnocchi, and spinach into the soup with care. Season with thyme, nutmeg, salt, and pepper to taste. Adjust consistency by adding more chicken broth, if needed.
