Bacon-wrapped potato wedges fried until crispy, finished with honey-scallion sauce. A deliciously indulgent side dish.
Ingredients:
  • 2 large potatoes, cut into 4 to 6 wedges
  • 8 slices bacon, or more as needed
  • 8 toothpicks
  • 2 cups canola oil, or as needed
  • 2 tablespoons butter, melted
  • 1 tablespoon honey, or to taste
  • 1 tablespoon chopped green onion
  • 0.5 teaspoon chopped fresh parsley
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
Instructions:
  • Wrap each golden, crispy potato wedge in the salty embrace of one savory slice of bacon, securing each end of the bacon carefully with a toothpick for a perfect blend of flavors and textures.
  • In a large saucepan, arrange potato wedges and pour in enough canola oil to cover halfway. Sauté over medium heat, flipping occasionally, until tender, about 20 minutes. Increase heat to high and cook until bacon is crispy, about 3 to 5 minutes. Drain on a paper towel-lined plate.
  • Combine butter, honey, green onion, parsley, salt, and pepper in a small bowl and mix well.
  • Take out toothpicks from potato wedges and place them on a serving platter. Pour the delicious melted butter mixture generously over the top.
