Grilled Bacon Potatoes

Irresistible bacon-wrapped potatoes with a sweet and savory twist.
Ingredients:
  • 4 baking potatoes, scrubbed
  • 1.25 teaspoons salt
  • 12 slices bacon
  • 2 tablespoons olive oil for brushing
  • 1 cup brown sugar
  • 2 tablespoons freshly ground black pepper
Instructions:
  • Preheat your outdoor grill until it reaches medium-high, indirect heat.
  • Slice each potato into 5 thick slices, being careful not to slice all the way through. Gently place the potatoes on individual squares of aluminum foil.
  • Season the sliced areas of a potato with a pinch of salt, then wrap each potato with 3 slices of bacon, securing with toothpicks if necessary. Drizzle each potato with a generous amount of olive oil, then sprinkle with brown sugar and black pepper. Wrap each potato loosely in foil. Repeat for the remaining potatoes.
  • Grill potatoes over indirect heat until bacon is crispy and potato is tender in the center, for 30-45 minutes.
