Stir-fried bok choy with savory bacon, onion, and garlic - a quick, flavorful side or main over rice!
Ingredients:
  • 4 slices bacon, chopped
  • 0.5 small red onion, chopped
  • 1 teaspoon olive oil
  • 1 teaspoon red pepper flakes
  • 1 teaspoon minced garlic
  • 2 pounds baby bok choy
Instructions:
  • In a large skillet over medium heat, fry bacon until crispy, about 5 to 7 minutes. Transfer the bacon to a paper towel-lined plate and reserve 1 tablespoon of grease in the skillet.
  • Sauté onion, oil, red pepper flakes, and garlic in the skillet until the onion is soft, for about 3 to 5 minutes, stirring occasionally.
  • Add the bok choy and cover the pan for 3 to 5 minutes until slightly tender. Uncover, sauté until the bok choy is crisp-tender, about 2 minutes. Mix in the bacon and season with salt. Serve promptly.
