Master the art of crispy, chewy shiitake bacon in your own oven. Perfect that distinct bacony texture we all crave. Happy cooking!
Ingredients:
  • 1 pound stemmed shiitake mushroom caps (about 2 pounds before trimming)
  • ¾ cup peanut oil
  • ½ cup tamari or soy sauce
  • ½ cup + ½ teaspoon nutritional yeast plus some for dusting
  • 1 teaspoon liquid smoke plus more to taste
Instructions:
  • Preheat the oven to 190°C/375°F/gas 5 and place racks in the center and bottom. Line two large baking sheets with parchment paper. Slice the rinsed shiitake caps into ¼-inch-thick slices, aiming for similar sizes. In a large bowl, whisk together peanut oil, tamari, ½ cup nutritional yeast, and liquid smoke. Toss the shiitake slices in the mixture until coated, then spread them evenly on the baking sheets. Sprinkle remaining nutritional yeast and spray with cooking oil. Bake for 40 minutes, then toss and coat with more nutritional yeast and oil. Bake for another 15 minutes until crispy on the edges. Keep watch and bake longer for desired crispiness.
