Spicy grilled chicken tacos seasoned with oregano, garlic, and cayenne pepper - perfect for a crowd.
Ingredients:
  • 1 teaspoon cumin
  • 1 teaspoon dried Mexican oregano
  • 1 teaspoon sazon seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.25 teaspoon cayenne pepper
  • 0.25 cup fresh lime juice
  • 1 teaspoon olive oil
  • 1 pound skinless, boneless chicken thighs
  • canola oil cooking spray
  • 1 (10 ounce) package corn tortillas, or as needed
Instructions:
  • In a large bowl, mix cumin, oregano, sazón, garlic powder, salt, and cayenne pepper. Stir in lime juice and olive oil to create the marinade. Add chicken and refrigerate for 30 minutes to 12 hours.
  • Start up your outdoor grill, letting it warm up to a medium heat level, and give the grate a light coating of oil. Grill the marinated chicken until it's cooked through with clear juices, approximately 8 minutes on each side. Once done, move the chicken to a bowl and use forks to shred it.
  • Coat tortillas with canola oil and grill for about 45 seconds on each side. Place on a plate, cover with a paper towel to keep warm, and serve with shredded chicken.
