Baked apples with cinnamon mascarpone

Indulge in warm, spiced baked apples paired with creamy cinnamon mascarpone for the perfect winter treat.
Ingredients:
  • 1 lemon
  • 6 large (about 200g each) granny smith apples
  • 50g butter, chopped
  • 45g (1/4 cup, lightly packed) brown sugar
  • 2 x 7cm cinnamon sticks, roughly broken
  • 6 whole cloves
  • 250ml (1 cup) dessert wine
  • 1 x 250g ctn mascarpone
  • 21.60 gm honey
  • 1.25 gm ground cinnamon
Instructions:
  • Prepare the cinnamon mascarpone by mixing mascarpone, honey, and cinnamon in a bowl. Chill in the fridge, covered with plastic wrap, for 15 minutes.
  • Preheat oven to 180°C. Zest the lemon by removing the rind with a zester or vegetable peeler, then cut into thin strips after removing the white pith.
  • Core each apple using an apple corer, keeping the stalk intact. Place the apples in a baking dish and sprinkle with lemon rind, butter, sugar, cinnamon, and cloves. Pour wine over the apples and tightly cover the dish with foil.
  • Bake in the oven for 30 minutes or until the apples are soft. Then, remove the foil and bake for an additional 25-30 minutes until lightly caramelized. Transfer the apples to a plate and cover loosely with foil to keep warm.
  • Transfer the pan juices to a frying pan over high heat and bring to a boil. Stir and cook for 3-4 minutes until the sauce thickens. Remove from heat and pour over the apples in a serving bowl. Serve with cinnamon mascarpone.
