Whip up quick and decadent baked apples with rum-caramel sauce and cinnamon topping in 15 minutes. Perfect for a fruity dessert option!
Ingredients:
  • 4 medium baking apples
  • 2 tablespoons water
  • 1 cup vanilla low-fat ice cream
  • 1/4 cup fat-free caramel topping
  • 1 tablespoon rum or apple cider
  • Dash ground cinnamon
Instructions:
  • Trim off the top and bottom of each apple, then carefully core them using a paring knife or apple corer.
  • Arrange the apples upright in a square 8- or 9-inch microwavable dish. Drizzle 2 tablespoons of water over the apples. Cover them with microwave-safe plastic wrap, leaving a small vent. Microwave on High for 8 to 10 minutes until the apples are tender. Save 1 tablespoon of the cooking liquid. Halve each apple before serving.
  • Arrange 2 apple halves in each serving bowl. Fill each with 1/4 cup of ice cream. Combine caramel topping, 1 tablespoon of cooking liquid, and rum in a small bowl; drizzle over apples. Finish by sprinkling with cinnamon.
