Quick and elegant baked asparagus with olive oil and Parmesan cheese, ready in 20 minutes.
Ingredients:
  • 1 pound asparagus
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon coarse or chunky kosher salt, or to taste
  • 1/8 teaspoon ground black pepper, or to taste
  • 1/2 cup loosely packed (about 1.5 ounces or 40g) shredded or grated Parmesan cheese, or to taste
Instructions:
  • Preheat the oven (or air fryer) to 400°F.
  • Prepare the asparagus: Trim off the woody ends of the asparagus spears. Optionally, use a vegetable peeler to remove the skins from the base for a sophisticated presentation.
  • Coat the asparagus spears with a drizzle of olive oil, and season with salt, pepper, and Parmesan cheese. Arrange them on a foil-lined baking sheet. If using an air fryer, coat the asparagus with olive oil and place in a single layer in the fryer basket. Sprinkle with salt, pepper, and Parmesan.
  • Bake: Cook at 400°F until the cheese is golden brown, approximately 8-10 minutes.
