Irresistibly crispy Southern baked BBQ fried chicken, perfect with or without sauce!
Ingredients:
  • 3 large eggs
  • 0.5 cup milk
  • 2 tablespoons salt
  • 2 tablespoons black pepper
  • 6 cups all-purpose flour
  • 0.25 cup salt
  • 5 teaspoons black pepper
  • 2 tablespoons minced garlic
  • 2 tablespoons dry mesquite flavored seasoning mix
  • 4 cups oil for frying, or as needed
  • 3 pounds skinless, boneless chicken breast halves - cut into strips
  • 1 (12 ounce) bottle barbecue sauce
Instructions:
  • Prepare the batter station: In a large bowl, blend eggs, water, milk, 2 tablespoons salt, and 2 tablespoons pepper until smooth. In another large bowl, mix flour, 1/4 cup salt, 5 teaspoons pepper, garlic, and mesquite seasoning.
  • Fill a large heavy skillet or wok halfway with oil and heat to 365 degrees F (180 degrees C).
  • Dip each chicken strip into the egg mixture and then coat evenly with the flour mixture twice, using a fork for easy handling.
  • Fry the coated chicken strips in hot oil in batches, making sure not to overcrowd the pan. Once one side is nicely browned, flip them over to brown the other side.
  • Preheat the oven to 300 degrees F (150 degrees C and butter a 12x20-inch glass baking dish, or two 9x13-inch baking dishes while you wait.
  • Coat the bottom of the prepared dish with a generous amount of flavorful barbeque sauce. Nicely line up the crispy fried chicken strips in rows in the dish. Lastly, drizzle the remaining sauce over the top for an extra burst of flavor.
  • Roast in the already heated oven until the sauce caramelizes on the chicken, for 10-15 minutes.
