Delicious beef and rice taquitos with red pepper and garlic, baked to perfection and topped with salsa on corn tortillas.
Ingredients:
  • 1 pound ground beef
  • 2 cups cooked white rice
  • 2 tablespoons water
  • 1.5 tablespoons chopped red bell pepper
  • 1 tablespoon chopped fresh garlic
  • 12 (6 inch) corn tortillas, or more to taste
  • 2 cups salsa
  • 1.5 cups shredded Cheddar cheese
Instructions:
  • Preheat your oven to 375°F (190°C) for the perfect cooking temperature.
  • In a large skillet over medium-high heat, sizzle ground beef until golden and crumbly, about 5 to 7 minutes. Remove and dispose of any excess grease.
  • Combine cooked rice, water, bell pepper, and garlic with the beef in the skillet, stirring and cooking until heated through for 3 to 5 minutes. Spoon the mixture onto tortillas and roll them up. Arrange the taquitos snugly in an 8x12-inch baking pan. Pour salsa over them and sprinkle Cheddar cheese on top.
  • Bake until bubbly for about 25 minutes in the preheated oven.
