Transform beef stew by browning lean, bone-in beef on the stove and finishing it in the oven with the bone for extra flavor.
Ingredients:
  • 0.25 cup flour, or as needed
  • 0.75 pound cubed beef stew meat
  • 1 onion, chopped
  • 1 stalk celery, chopped
  • 4 carrots, peeled and chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 bay leaves
  • salt and freshly ground black pepper to taste
Instructions:
  • Preheat the oven to 300°F (150°C) to create the perfect cooking environment.
  • Place flour in a shallow bowl and coat the beef in flour, shaking off any excess. In an ovenproof casserole dish, heat oil over high heat. Brown the beef cubes in batches on all sides for about 5 minutes per batch. Remove beef to a plate.
  • Liven up the dish with onion, celery, and carrots in the casserole over medium heat until softened, approximately 5 minutes. Introduce garlic and sauté for another minute. Pour in the broth, reincorporate the beef, and blend in bay leaves before covering the casserole.
  • Bake in the preheated oven for 1 1/2 to 2 hours until the beef is tender. Remove bay leaves before serving and season with salt and pepper to taste.
