Succulent top round steak baked in a flavorful red wine broth with mushrooms and onions - a gourmet twist on classic beef stroganoff.
Ingredients:
  • 5 tablespoons olive oil, divided
  • 2.5 pounds top round steak, cut into thin strips
  • 2 cups sliced fresh mushrooms
  • 1 large onion, thinly sliced
  • 1 clove garlic, smashed
  • 0.25 cup dry red wine
  • 0.25 cup tomato paste
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 bay leaf, crumbled
  • 0.5 cup beef broth
  • 0.5 cup sour cream
Instructions:
  • Preheat a frying pan over medium-high heat. Drizzle 3 tablespoons of oil to coat the bottom. Sear the steak on all sides until golden brown, about 5 to 7 minutes. Place the steak in a 3-quart baking dish.
  • Pour the remaining 2 tablespoons of oil into the hot frying pan. Sauté mushrooms, onion, and garlic until softened, about 5 minutes. Remove from heat.
  • Combine red wine, tomato paste, flour, salt, pepper, and bay leaf in the pan. Gradually whisk in beef broth until fully incorporated. Pour the flavorful mixture over the beef, then cover the baking dish with aluminum foil.
  • Preheat the oven to 350°F (175°C) for the perfect baking temperature.
  • Roast in the oven until the beef is tender, for 45 minutes to 1 hour.
  • Fold in the velvety sour cream and present for a divine dining experience.
