Oven-Baked Marinated Beef Roast

Indulge in a succulent baked marinated beef roast for a delicious dinner.
Ingredients:
  • 3/4 cup chili sauce
  • 1/4 cup red wine vinegar
  • 2 tablespoons sugar
  • 2 tablespoons soy sauce
  • 1/2 teaspoon garlic-pepper blend
  • 1/2 teaspoon ginger
  • 1 (2 to 2 1/2-lb.) eye of round beef roast
Instructions:
  • Mix all ingredients, except the roast, together in a large resealable plastic bag. Add the roast to the bag, seal, and coat the meat with the marinade. Refrigerate for at least 8 hours or overnight to marinate.
  • Preheat oven to 325°F. Take the beef out of the marinade, keeping the marinade. Place beef in a shallow roasting pan. Bake for 1 1/2 to 1 3/4 hours until cooked to your liking, basting with marinade occasionally.
  • Bring any leftover marinade to a boil in a small saucepan. Slice beef thinly and serve with the heated marinade.
