Baked berry custards

Family-favorite baked custard with delicious berry filling.
Ingredients:
  • 400g mixed fresh berries or thawed frozen berries
  • 375ml (1 1/2 cups) thickened cream
  • 1 vanilla bean, split
  • 5 egg yolks
  • 100g (1/2 cup) caster sugar
  • Icing sugar, to dust
Instructions:
  • Preheat your oven to 180°C. Mix the fresh berries in a large glass or ceramic bowl. Divide the mixture evenly among six oval ovenproof dishes with a 375ml (1 1/2-cup) capacity. Arrange the dishes in a large roasting pan.
  • In a saucepan, bring cream and vanilla bean to a boil over medium heat. Remove from heat, scrape vanilla seeds into cream using a sharp knife, and discard the bean.
  • In a heatproof jug, vigorously whisk together the egg yolks and sugar until well combined. Slowly whisk in the hot cream mixture. Pour the mixture through a fine sieve into a clean saucepan. Stir over low heat for 5 minutes or until the custard simmers and slightly thickens.
  • Divide the custard among the dishes. Place the dishes in a roasting pan and add enough boiling water to reach halfway up the sides of the dishes. Bake in a preheated oven for 30 minutes or until the custard is just set. Remove the pan from the oven and take the dishes out of the water bath.
  • Sprinkle baked berry custards with powdered sugar and enjoy while warm.
