Indulge in festive custard pastries for a cozy holiday treat with loved ones.
Ingredients:
  • 1/2 x 125g punnet blueberries
  • 1/2 x 125g punnet raspberries
  • 1/2 x 250g punnet strawberries, sliced
  • 2.50 gm cornflour
  • 3.00 gm icing sugar mixture
  • 2 sheets butter puff pastry, partially thawed
  • 158.40 gm thick vanilla custard
  • Icing sugar mixture, for dusting
Instructions:
  • Preheat the oven to 210°C/190°C fan-forced and lightly grease 2 large baking trays with oil. Mix together blueberries, raspberries, strawberries, cornflour, and icing sugar in a bowl, then set aside.
  • Lay out pastry sheets and cut each into 4 squares. Fold edges of each square to create a 1cm border. Arrange on baking trays. Add 1 level tablespoon custard to the center of each square without spreading it, then top with 2 level tablespoons of berry mixture.
  • In a small bowl, whisk together 1 egg and 1 teaspoon of cold water. Use a pastry brush to glaze the edges of the pastry with the egg mixture. Bake until the pastry is golden and puffed, about 15 minutes. Let it stand on the trays for 5 minutes, then transfer to a wire rack to cool. Dust with icing sugar mixture before serving.
