Indulge in a delightful berry dessert!
Ingredients:
  • 386.25 gm milk
  • 2 tsp vanilla bean paste
  • 5 egg yolks
  • 107.50 gm caster sugar
  • 20.00 gm cornflour
  • 12 frozen sweet shortcrust pastry cases
  • 125g fresh raspberries
Instructions:
  • In a saucepan over medium-low heat, gently warm the milk and vanilla. Stir occasionally for 6 to 8 minutes until it's almost simmering (avoid boiling).
  • In a bowl, combine egg yolks, sugar, and cornflour. Beat with an electric mixer until thick and creamy.
  • Slowly add milk mixture to the egg mixture while whisking until silky. Transfer the combined mixture to a fresh saucepan over medium heat. Stir consistently for 5 minutes until it starts to bubble. Let it boil for another minute until it thickens. Take off the heat and cover the surface with plastic wrap. Allow it to cool.
  • Preheat your oven to 180°C/160°C fan-forced. Bake the pastry cases according to the directions on the package. Allow them to cool.
  • Evenly distribute the delicious custard among the pastry cases and generously layer with fresh berries. Ready to enjoy!
