Baked butterscotch custard

Decadent custard infused with butterscotch schnapps and rich dark chocolate.
Ingredients:
  • 500ml cream
  • 2 eggs
  • 2 egg yolks
  • 80g caster sugar
  • 60ml schnapps
  • 80g dark cooking chocolate
  • Icing sugar, to dust
Instructions:
  • Preheat oven to 150°C. Heat cream in a saucepan over medium heat until just steaming. Remove from heat.
  • In a heatproof bowl, combine the eggs, egg yolks, and sugar and whisk until fully mixed.
  • Gradually pour the warm cream into the eggs while whisking until smooth. Stir in the butterscotch schnapps.
  • Arrange 6 ramekins in a baking dish and place 4 squares of chocolate in each one. Pour the cream mixture evenly into the ramekins. Fill the baking dish halfway up the sides of the ramekins with hot water. Bake for 40 minutes until the mixture is set. Let it cool for 20 minutes before serving with a dusting of icing sugar.
