Butterscotch crumble baked apples

Elevate traditional baked apples with a decadent butterscotch crumble topping.
Ingredients:
  • 4 Pink Lady apples
  • 30g rolled oats
  • 35g plain flour
  • 32.00 gm brown sugar
  • 1.25 gm ground cinnamon
  • 50g butter, chopped
  • 40.00 ml flaked almonds
  • Vanilla ice-cream, to serve
  • 75g brown sugar
  • 80ml thickened cream
  • 20g butter
Instructions:
  • Preheat the oven to 180C. Core the apples using an apple corer, then trim 5mm from the tops of each apple with a small sharp knife. Make 3 horizontal slits around each apple without cutting all the way through. Arrange the prepared apples in a ceramic baking dish.
  • In a small bowl, combine oats, flour, sugar, and cinnamon. Incorporate the butter using your fingertips. Mix in the almonds. Divide the mixture among the apples, covering them evenly. Top with any leftover crumble. Bake for 40-45 minutes until the apples are tender.
  • In a saucepan over medium heat, combine sugar, cream, and butter. Stir and cook for 5 minutes until the sugar dissolves and the sauce slightly thickens to make the butterscotch sauce.
  • Arrange the apples on individual serving plates, generously drizzle with the luscious butterscotch sauce, and promptly serve with a scoop of smooth vanilla ice cream.
