Fudge Jumbles (Chocolate Cookie Bars)

Irresistible fudge jumble bars with crumbly oat dough and gooey butterscotch center.
Ingredients:
  • 2.5 cups all-purpose flour
  • 2 cups brown sugar
  • 1 cup margarine
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 3 cups rolled oats
  • 0.75 cup butterscotch chips
  • 0.75 cup chocolate chips
  • 2 tablespoons margarine
  • 1 (14 ounce) can sweetened condensed milk
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking pan.
  • In a bowl, blend together flour, brown sugar, 1 cup margarine, eggs, 2 teaspoons vanilla extract, and 1 teaspoon baking soda until mixed. Fold in oats. Press 2/3 of the mixture into the bottom of the pan.
  • In a saucepan over medium heat, melt butterscotch, chocolate chips, and 2 tablespoons of margarine until smooth. Stir in condensed milk and 2 teaspoons of vanilla extract. Pour the mixture into a baking pan and sprinkle the remaining oat mixture on top.
  • Bake in the preheated oven for about 25 minutes until fully set. Let it cool for at least 10 minutes, then slice into squares.
