Indulgent brownies with a perfect crust and a fudgy center – your ultimate treat. Here's how to make them to your liking.
Ingredients:
  • Melted butter, to grease
  • 200g pkt dark cooking chocolate, coarsely chopped
  • 3 eggs
  • 2 egg yolks
  • 270g (1 1/4 cups) caster sugar
  • 115g (3/4 cup) plain flour
  • 35g (1/3 cup) Cocoa Powder
Instructions:
  • Preheat the oven to 160°C. Grease a 16 x 26cm slab pan with melted butter and line it with non-stick baking paper, leaving enough overhang for easy removal later.
  • Gently melt chocolate and butter in a heatproof bowl set over simmering water, ensuring the bowl doesn't touch the water. Stir with a dry metal spoon to prevent the chocolate from hardening due to moisture.
  • Combine the eggs and egg yolks in a jug and whisk until smooth. Let the chocolate mixture cool a bit, then pour in the eggs. Be cautious not to scramble the eggs by adding them to hot chocolate. Mix everything together.
  • In a large bowl, mix sugar and flour, then sift in the cocoa powder. Gently fold in the chocolate mixture until just combined to keep the brownies tender. Pour into the pan and spread the batter evenly.
  • Bake in the oven for 45-50 minutes or until a skewer inserted into the center comes out with moist crumbs. Avoid over-baking to keep your brownies fudgy. Let them cool for 6 hours or overnight to set perfectly.
