Peanut Butter Rice Krispies Brownies

Decadent fudge brownies laced with creamy peanut butter, crowned with a crispy rice cereal topping for a divine treat.
Ingredients:
  • 1 (18 ounce) package fudge brownie mix
  • 0.5 cup vegetable oil
  • 2 eggs
  • 0.33333334326744 cup flour
  • 0.25 teaspoon baking powder
  • 0.5 cup crunchy peanut butter
  • 0.375 cup brown sugar
  • 2 tablespoons butter, softened
  • 1 egg
  • 0.5 teaspoon vanilla extract
  • 0.25 cup butter
  • 4 cups miniature marshmallows
  • 3.5 cups crispy rice cereal (such as Rice Krispies®)
Instructions:
  • Heat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking dish.
  • Whisk together brownie mix, vegetable oil, water, and 2 eggs until a silky batter forms.
  • Combine the flour, baking powder, and salt, whisking them together in a small bowl.
  • Using an electric mixer, blend peanut butter, brown sugar, and 2 tablespoons of butter until light and creamy. Add 1 egg and vanilla, beat until fluffy. Gently stir in the flour mixture until just combined.
  • Spread the brownie batter evenly in the prepared baking dish. Dollop the peanut butter mixture on top using small spoonfuls.
  • Bake the brownies in the oven until a toothpick inserted in the center comes out clean, approximately 30 minutes, then allow them to cool.
  • In a large saucepan over medium heat, melt 1/4 cup of butter. Add marshmallows and stir until fully melted. Cook for about 2 minutes until the flavors are combined; then remove from heat.
  • Spread a layer of marshmallow mixture over the cooled brownies; then mix crispy rice cereal into the remaining marshmallow mixture and press it evenly on top. Chill until firm for about 15 minutes, then cut into squares.
