Make mini fudge muffins with pecans, perfect for holiday gifting.
Ingredients:
  • 1.75 cups white sugar
  • 4 (1 ounce) squares semisweet chocolate
  • 1 cup all-purpose flour
  • 4 eggs, at room temperature
  • 1 cup chopped pecans
Instructions:
  • Preheat your oven to a toasty 325 degrees F (165 degrees C) and prepare 2 mini muffin tins with adorable mini foil liners.
  • In a double boiler, melt sugar, butter, and semisweet chocolate over simmering water. Stir often and scrape down the sides with a rubber spatula to prevent scorching. Once chocolate is melted after about 5 minutes, mix in flour and salt. Remove from heat and cool for 10 minutes before using.
  • Gently incorporate eggs one by one into the luscious chocolate mix; fold in pecans and aromatic vanilla. Spoon batter into the mini muffin tins.
  • Bake in the oven preheated to perfection until a toothpick inserted in the center emerges clean, approximately 25 minutes.
