Fudgy Chocolate Chip Muffins

Decadent double chocolate muffins with rich cocoa powder and chocolate chips.
Ingredients:
  • 0.5 cup applesauce
  • 0.25 cup margarine, softened
  • 0.5 cup white sugar
  • 0.5 cup light brown sugar
  • 0.5 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 0.25 cup unsweetened cocoa powder
  • 0.25 teaspoon ground cinnamon
  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons confectioners' sugar
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and neatly line your 2-1/2 inch muffin cups with pretty paper bake cups.
  • In a large mixer bowl, whip together butter, sugar, brown sugar, egg, and vanilla until thoroughly combined. Mix in applesauce until smooth.
  • Combine flour, cocoa, baking soda, and cinnamon in a separate bowl. Add this mixture to the butter mixture and blend well. Fold in chocolate chips and then fill muffin cups 3/4 full with batter.
  • Preheat oven to 350 degrees F (175 degrees C). Bake muffins for 22 to 26 minutes until a wooden pick inserted in the center comes out almost clean. Let them cool slightly on a wire rack. Optional: sprinkle muffin tops with confectioners' sugar. Serve warm.
