Indulge in these irresistible chocolate nut cookies for a delightful sweet finale.
Ingredients:
  • 1/2 cup sweet white sorghum flour
  • 1/2 cup tapioca flour
  • 1/4 cup white rice flour
  • 1/4 cup almond flour
  • 1/4 cup garbanzo and fava flour
  • 1/2 cup unsweetened baking cocoa
  • 1 1/2 teaspoons xanthan gum
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 cup sunflower or canola oil
  • 1 cup sugar
  • 2 teaspoons pure vanilla
  • 1/4 cup almond milk, soymilk or regular milk
  • 1/2 cup miniature semisweet chocolate chips
  • 1/4 cup chopped walnuts
  • 2 tablespoons sugar
Instructions:
  • Preheat oven to 350°F and generously spray a cookie sheet with cooking spray (without flour).
  • Combine flours, cocoa powder, xanthan gum, salt, and baking soda in a small bowl. In a medium bowl, use an electric mixer to blend egg, oil, 1 cup sugar, vanilla extract, and milk until smooth. Slowly incorporate the flour mixture into the wet ingredients until fully combined. Fold in chocolate chips and nuts.
  • Place 2 tablespoons of sugar in a small bowl. Shape the dough into 1 1/2-inch balls and dip the tops in sugar before placing them on a cookie sheet.
  • Bake for 15-17 minutes or until fully cooked. Allow to cool for 5 minutes, then transfer from the baking sheet to a cooling rack.
