Succulent cinnamon-spiced chicken breasts in flavorful tomato sauce, perfect with brown rice, garlic mashed potatoes, or creamy polenta.
Ingredients:
  • 1 teaspoon ground cinnamon
  • 0.75 teaspoon kosher salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon cumin
  • 0.125 teaspoon garlic powder
  • 0.125 teaspoon onion powder
  • 3 (5 ounce) skinless, boneless chicken breasts
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 carrot, minced
  • 1 stalk celery, minced
  • 1 (8 ounce) package fresh mushrooms, sliced
  • 0.5 cup dry white wine
  • 1 (6 ounce) can tomato paste
  • 0.5 cup low-sodium chicken stock
Instructions:
  • Preheat your oven to 375°F (190°C) for the perfect temperature to start cooking.
  • Combine cinnamon, salt, black pepper, oregano, cumin, garlic powder, and onion powder in a bowl. Rub the seasoning all over the chicken, saving some for the sauce.
  • In a large oven-safe skillet, heat vegetable oil over medium heat until shimmering. Add chicken breasts and sear for 3 minutes on each side until golden brown. Set aside cooked chicken breasts.
  • Heat a skillet and sauté onion, garlic, carrot, celery, and mushrooms until the onions are slightly translucent. Pour in wine to deglaze the pan, letting it reduce for about a minute. Add tomato paste, chicken broth, and reserved seasoning, then cover the skillet with foil or a lid.
  • Bake in the preheated oven for 35 minutes. Uncover and bake for an additional 15-20 minutes until the sauce is bubbling and the chicken is fully cooked. Check with an instant-read thermometer for a minimum internal temperature of 165 degrees F (74 degrees C).
