Delicious and flavorful baked chicken flautas - a family favorite!
Ingredients:
  • 2 (5 ounce) skinless, boneless chicken breast halves
  • 0.5 medium onion, cut into chunks
  • 2 cloves garlic
  • 1 tablespoon salt
  • 2 tablespoons vegetable oil
  • 1 (1.41 ounce) package sazon seasoning with saffron (such as Goya® Azafran)
  • 0.5 cup vegetable oil for frying
  • 14 (6 inch) corn tortillas
  • 1 cup shredded Monterey Jack cheese
Instructions:
  • In a deep pot, combine chicken breasts, onion, garlic, and salt. Cover with water and simmer on medium heat until chicken is fully cooked, adding more water if needed, for about 30 to 40 minutes. Once done, shred the chicken using two forks and set aside 1/2 cup of the flavorful stock.
  • In a frying pan over medium heat, warm 2 tablespoons of oil. Add shredded chicken and sazon seasoning. Pour in the reserved chicken stock, stir, and lower the heat. Simmer until the stock is fully absorbed. Take off the heat and let it cool.
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • In a separate frying pan over medium heat, heat 1/2 cup of vegetable oil. Fry corn tortillas one at a time until soft (not crispy), about 30 seconds to 1 minute per side. Set aside the tortillas as you cook them.
  • Add a generous amount of seasoned cooked chicken and Monterey Jack cheese to one end of each tortilla. Roll them up tightly into flautas and arrange them neatly on a baking sheet.
  • Bake until beautifully golden brown, about 15 to 20 minutes in the preheated oven.
