Easy and quick baked chicken thighs in tangy orange-mustard sauce. Perfect served over fluffy rice.
Ingredients:
  • 4 boneless chicken thighs
  • 1 tablespoon olive oil
  • 0.5 cup orange marmalade
  • 0.25 cup bourbon
  • 0.25 cup yellow mustard
  • 0.25 cup onion, diced
  • 2 cloves garlic, minced
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • Season both sides of the chicken thighs with a pinch of salt and pepper. Heat olive oil in a skillet over medium heat and sear the chicken for about 2 minutes per side until nicely browned. Place the chicken thighs in an 8-inch square baking dish.
  • In a small bowl, mix together orange marmalade, bourbon, mustard, onion, and garlic. Transfer the sauce to the skillet and cook over medium heat for about 2 minutes to let the bourbon cook off. Then, pour the flavorful sauce over the chicken thighs in the baking dish.
  • Roast the uncovered chicken thighs in the preheated oven until they are no longer pink and the juices run clear, about 25 minutes. Use an instant-read thermometer to ensure the center reaches 165 degrees F (74 degrees C).
