Try quick and delicious baked chicken thighs with cherry tomatoes, garlic, and rosemary - a perfect one-dish meal!
Ingredients:
  • 2 pounds (900 g) bone-in, skin-on chicken thighs, trimmed of excess fat
  • 2 cups of cherry tomatoes (a heaping basket or 25 to 30 cherry tomatoes)
  • 6 whole cloves garlic, peeled
  • 1 1/2 tablespoons balsamic vinegar
  • 1 1/2 teaspoons extra virgin olive oil
  • 2 sprigs fresh rosemary (or 1/2 teaspoon dry rosemary)
Instructions:
  • Preheat your oven to 375°F (190°C).
  • Lay out the chicken thighs in a spacious baking dish and season both sides generously with salt.
  • Prepare the cherry tomatoes by halving them and combining them in a bowl with whole garlic cloves. Drizzle with balsamic vinegar and olive oil.
  • Pour the cherry tomato mixture over the chicken, ensuring the chicken pieces are nestled in between. Expose the chicken skins for optimal browning in the oven. Top with fresh rosemary sprigs or mix in dry rosemary with the tomatoes if needed.
  • Bake until golden: Bake uncovered for 45 minutes until the chicken is golden and fully cooked. Let it cool for 5 minutes, then remove excess chicken fat with a ladle. Serve with toasted crusty bread, buttered noodles, or rice. Omit bread and noodles for a gluten-free option.
