Elevate baked chicken with feta and grapes for a gourmet twist.
Ingredients:
  • 100g goat's milk feta
  • 4 chicken breasts
  • 4 prosciutto slices
  • 350g red globe grapes
  • 250g seedless green grapes
  • 8 small fresh rosemary sprigs
  • Salt & freshly ground pepper
  • 36.40 gm olive oil
Instructions:
  • Preheat the oven to 220°C. Divide the cheese into four even oblongs. Place a piece of cheese under each chicken tenderloin and secure by tucking it in. Fold the tenderloin over the cheese to cover it. Alternatively, for smaller tenderloins, remove them and cut a slit into the thickest part of the chicken breast horizontally to make a pocket. Stuff the pocket with cheese and fold the other side of the chicken breast over to seal. Wrap each chicken breast with a slice of prosciutto.
  • Gently separate the grapes from the stems, then spread them on a large baking tray along with the rosemary sprigs. Sprinkle with salt and pepper and drizzle with 1 1/2 tablespoons of olive oil. Toss everything together until well combined.
  • Place the chicken breasts into the bed of juicy grapes, then generously drizzle with the remaining olive oil. Season with freshly ground pepper and bake in the oven for 25 minutes until the chicken is perfectly cooked.
