Baked cod fish tacos with zesty cabbage slaw and fresh crema offer a delicious twist on classic dishes.
Ingredients:
  • 1 pound cod fillets
  • 1 tablespoon olive oil
  • 1 lime, zested and juiced, divided
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground coriander
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon cayenne pepper
  • 0.5 teaspoon ground black pepper
  • 0.5 cup sour cream
  • 1 clove garlic, minced
  • 1 pinch salt
  • 1 small head red cabbage, shredded
  • 0.5 teaspoon white vinegar
  • 6 (7 inch) flour tortillas
  • 1 tomato, diced
Instructions:
  • Heat the oven to a toasty 425 degrees F (220 degrees C).
  • Lay cod fillets in a casserole dish, then generously drizzle with olive oil and a burst of freshness from 1 tablespoon of lime juice. Sprinkle with a flavorful mix of cumin, coriander, smoked paprika, a kick of cayenne, 1/2 teaspoon of salt, and a twist of black pepper.
  • Bake the fish until it flakes easily with a fork, about 20 minutes. Then, use 2 forks to break apart the fish in the baking dish.
  • In a bowl, mix together sour cream, garlic, lime zest, 1/4 teaspoon lime juice, and a pinch of salt to make the crema. In another bowl, toss together cabbage, 1/4 teaspoon lime juice, and vinegar to make the cabbage slaw.
  • Microwave tortillas with a moist paper towel on top for 30 to 45 seconds until warm and soft.
  • Create delicious tacos by stacking each tortilla with cod, crunchy cabbage slaw, flavorful crema, and ripe tomato. Enjoy while hot.
