Baked Cod with Ritz Cracker Topping

White fish baked with a crispy buttery Ritz cracker topping.
Ingredients:
  • 2 pounds skinless cod fillets
  • Salt
  • 1 sleeve of Ritz crackers (about 34 crackers)
  • 5 tablespoons unsalted butter
  • Lemon and parsley for garnish (optional)
Instructions:
  • Preheat your oven to 350°F and generously coat a small baking or casserole pan with butter or a drizzle of oil.
  • Rinse the fish fillets under cold water and pat them dry. Use long nose pliers to gently remove any pin bones.
  • Lay the fillets at the base of the dish, optionally cutting them into generous portions. Sprinkle the fillets with salt before proceeding.
  • Create a buttery cracker topping: Melt the butter, then combine it with crushed Ritz crackers until they resemble coarse breadcrumbs. Gently press the crumb mixture onto the fish fillets, covering the top and sides evenly.
  • Bake the fish at 350°F for about 20 minutes until it flakes easily. Thinner fillets may cook faster, while thicker cuts may require more time. Serve the cooked fish with a garnish of lemon and parsley.
