Bake cod fillets with a delicious herbed Boursin cheese topping, diced tomatoes with garlic, onions, and peppers, and Parmesan for a quick and flavorful seafood dish.
Ingredients:
  • 2 tablespoons butter, melted
  • 2 pounds fresh cod fillets
  • 1 (4 ounce) package Boursin cheese with herbs, room temperature
  • 1 (14.5 ounce) can diced tomatoes with garlic, onion, and peppers, drained
  • 2 tablespoons shredded Parmesan cheese
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • Drizzle the melted butter in the baking dish to coat the bottom, then place the cod fillets in the dish. Pat the fillets dry with a paper towel. Evenly spread the Boursin cheese over the fillets, pour the tomatoes on top, season with salt and pepper, sprinkle with Parmesan cheese, and drizzle with the remaining melted butter.
  • Place in a hot oven and bake for 25 minutes without covering.
