Baked Cod with Lemon Herb Butter

Easy dinner: Cod filets with lemon-herb butter and crunchy panko coating.
Ingredients:
  • 1 1/2 tablespoons unsalted butter, at room temperature, plus more for buttering the pan
  • 2 tablespoons fresh minced parsley
  • 1 teaspoon lemon zest
  • 1 clove garlic, minced
  • 1/4 teaspoon salt, or to taste
  • 1/8 teaspoon white pepper
  • 1 teaspoon lemon juice
  • 2 cod filets, 6 to 8 ounces, each
  • 2 Tablespoons panko crumbs
Instructions:
  • Preheat the oven to 425°F (220°C). Cover a baking pan with foil and grease it with butter.
  • On a cutting board, evenly spread out 1 1/2 tablespoons of butter in a 3-inch circle. Top with parsley, lemon zest, garlic, salt, and white pepper.
  • Use a fork to thoroughly blend the butter and seasonings for about 2 minutes. Shape the mixture into a mound, then divide it in half.
  • Dry cod filets with a paper towel, lay in the buttered pan, coat each filet with half of the lemon-herb butter, and sprinkle with panko crumbs evenly.
  • Bake the filets in the oven until the fish flakes easily with a fork and the topping is lightly browned, approximately 10 to 12 minutes.
