Mediterranean baked cod with zesty lemon and herbs, ready in just 25 minutes.
Ingredients:
  • 3 Tablespoons softened unsalted butter
  • 1 Tablespoon finely minced fresh garlic
  • 1 Tablespoon minced fresh parsley
  • 2 teaspoons minced fresh oregano
  • 1 teaspoon minced fresh thyme or rosemary
  • 1/2 teaspoon finely ground pink salt, or to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon paprika
  • 1 lemon, cut into 8 thin slices
  • 4 cod filets, about 6 ounces each
  • 1 Tablespoon extra virgin olive oil
  • Fresh parsley springs for optional garnish
Instructions:
  • Preheat the oven to a toasty 400°F (200°C).
  • On a cutting board, combine softened butter, minced garlic, parsley, oregano, and thyme or rosemary. Using a sharp knife, chop and mix the herbs and garlic into the butter. Season with pink salt, black pepper, and paprika, then thoroughly blend.
  • Dry the cod filets carefully. Arrange them on a 12x18-inch casserole or baking pan with 2 lemon slices under each filet. Spread the herb butter mixture evenly over the filets using a fork or offset spatula. Finish by placing 2 lemon slices on top of each filet.
  • Cook in the oven until the cod easily flakes with a fork, around 13 to 15 minutes. Refer to the note for more details.
  • Drizzle each filet with a finishing touch of extra virgin olive oil and garnish with fresh parsley for a burst of flavor, if desired.
