Baked cod with zesty Mediterranean topping - simple for weekdays, elegant for entertaining.
Ingredients:
  • 1 1/2 lb cod filets
  • 1 teaspoon olive oil
  • 1 1/2 teaspoons Greek seasoning
  • 1/3 cup pitted Kalamata olives
  • 1/3 cup roughly chopped artichoke hearts in brine, drained
  • 1/4 cup olive oil-packed sun-dried tomatoes, drained and cut into matchsticks
  • 2 teaspoons freshly-squeezed lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley, or as needed
  • 4 fresh lemon wedges
Instructions:
  • Preheat the oven to a toasty 375 degrees F (190 degrees C), then cover a baking sheet with aluminum foil and give it a quick spritz of cooking spray.
  • Dry the fish filets with a paper towel, then lay the cod on a baking sheet, drizzle lightly with olive oil, and generously sprinkle with Greek seasoning.
  • Mix together Kalamata olives, artichoke hearts, sun-dried tomatoes, lemon juice, and garlic in a small bowl. Spoon the flavorful mixture evenly over the filets.
  • Bake the cod for 14 to 16 minutes until it flakes easily with a fork and reaches an internal temperature of 145 degrees F (63 degrees C. Adjust baking time for different filet thicknesses.
  • Use a large spatula to transfer the cod and topping to a serving dish. Sprinkle with chopped parsley, and serve with a lemon wedge.
