Warm and comforting baked cod with potatoes and onions, reminiscent of creamy fish chowder. Perfect for cozy nights in.
Ingredients:
  • 2 (4 ounce) boneless cod fillets
  • 2 large potatoes, peeled and sliced
  • 1 medium onion, thinly sliced
  • 2 cups milk, or as needed
  • 1 tablespoon salted butter, cut into small pieces
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously butter a large rectangular baking dish.
  • Lay the fish in the dish, surround it with potato and onion slices, and pour in just enough milk to cover. Season generously with salt and pepper, then dot the top with butter.
  • Roast in the oven until the fish flakes easily with a fork and the potatoes are tender, about 45 minutes. Check occasionally and add more milk if needed. Serve in generous bowls.
