Try 'Claudia's Eggs' - hard-boiled eggs in a rich, cheesy sauce on toast. Perfect for a special holiday brunch.
Ingredients:
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 cup evaporated milk
  • 1 dash white pepper
  • 3 dashes cayenne pepper
  • 6 hard-cooked eggs, sliced
  • 3 slices extra sharp Cheddar cheese, halved
  • 6 slices white bread, toasted and cut into triangles
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) for the perfect cooking temperature.
  • In a saucepan over medium heat, melt butter until sizzling. Add flour and stir until velvety. Slowly pour in evaporated milk and water while whisking. Season with salt, white pepper, and cayenne pepper. Keep stirring until it thickens beautifully.
  • In a medium baking dish, elegantly layer the sliced eggs, generously pour the flavorful sauce over them, and artfully place the cheese slices on top.
  • Place toast on plates and generously coat with egg mixture after baking in a preheated oven for 15 to 20 minutes.
