Cheesy Baked Supper Omelet

Bake a delicious and efficient egg casserole for six in no time!
Ingredients:
  • 1 tablespoon butter
  • 1/2 cup chopped red or green bell pepper (1 small)
  • 1/4 cup chopped onion (1/2 medium)
  • 12 eggs
  • 1 container (8 oz) sour cream
  • 1/8 teaspoon pepper
  • 1 1/2 cups shredded cheddar-Monterey Jack cheese blend (6 oz)
Instructions:
  • Preheat oven to 325°F. Grease a 12x8-inch (2-quart) glass baking dish with cooking spray. In an 8-inch skillet over medium heat, melt butter. Sauté bell pepper and onion for 2 to 3 minutes until tender, stirring occasionally.
  • Combine eggs, sour cream, salt, and pepper in a large bowl and whisk until smooth. Mix in bell pepper mixture and cheese, then transfer to a baking dish.
  • Bake for 20-25 minutes until the eggs are fully set, then cut the omelet into squares before serving.
