Baked feta, yellow potatoes, roasted red peppers, garlic, and pesto mashed together for a flavorful dish.
Ingredients:
  • 2 garlic cloves minced
  • 1/4 cup olive oil
  • 1 1/2 lbs yellow potatoes, quartered
  • 1/2 cup chopped Roasted Red Peppers
  • 1 tablespoon pesto
  • ¼ teaspoon salt, or to taste
  • ¼ teaspoon ground pepper
  • 8 oz feta cheese
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C). Combine potatoes, peppers, pesto, and garlic in a baking dish, drizzle with olive oil, and mix well. Season with salt and pepper. Place the block of feta cheese in the center of the potato mixture.
  • Roast in the preheated oven until potatoes are fork-tender, for about 45 minutes. Mash the potatoes and feta using a potato masher.
