Elevate baked fish with flavorful tomato paste sauce.
Ingredients:
  • 9.20 gm olive oil
  • 1 small brown onion, chopped
  • 1 medium red capsicum, thinly sliced
  • 20.00 ml drained capers
  • 575g jar napoletana pasta sauce
  • 4 (200g each) frozen white fish fillets, thawed (see note)
  • Fresh small basil leaves, to serve
  • Steamed broccoli, to serve
  • Crusty bread, to serve
Instructions:
  • Preheat oven to 220°C/200°C fan-forced. In a medium saucepan over medium heat, sauté onion, garlic, and capsicum in oil until onion softens, about 3-4 minutes. Stir in capers and sauce, bring to a simmer, then remove from heat.
  • Spread the mixture evenly in a 6cm-deep, 20cm x 30cm baking dish. Place the fish on top and bake for 15-20 minutes until cooked. Serve the fish on plates, top with tomato mixture, basil, salt, and pepper. Enjoy with broccoli and crusty bread on the side.
