Delicious lobster stuffed with buttery cracker filling, perfect for romantic occasions like Valentine's Day!
Ingredients:
  • 1 (1 1/2 pound) fresh lobster
  • 0.5 cup butter, melted and divided
  • 1 cup crushed buttery round crackers
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C), then swiftly and humanely dispatch the lobster by piercing just behind its eyes with a sharp knife.
  • Lay the lobster on its back and carefully cut open the cavity with a sharp knife. Remove the stomach and intestines and discard them. Save the tomalley in a small bowl. Combine cracker crumbs with the tomalley and fill the body cavity with the mixture. Drizzle around 2 teaspoons of butter on top. Transfer the lobster to a 2-inch-deep baking dish.
  • Roast the lobster for 30 minutes without covering it.
  • Preheat the oven's broiler and toast the crackers for 3 to 5 minutes. Serve with the remaining melted butter on the side.
