Baked rainbow trout with zesty herbs and citrus for a flavorful, easy dish.
Ingredients:
  • 2 teaspoons olive oil, divided
  • 2 whole rainbow trout, gutted and cleaned, heads and tails still on
  • 0.25 teaspoon dried dill weed
  • 0.25 teaspoon dried thyme
  • salt to taste
  • 0.5 large onion, sliced
  • 2 thin slices lemon
  • 2 tablespoons hot water
  • ground black pepper to taste
Instructions:
  • Preheat the oven to 400°F (200°C) and lightly grease a 9x13-inch baking dish with 1 teaspoon of olive oil.
  • Prepare the baking dish by laying the trout in it, then drizzle with the leftover olive oil. Lastly, collect the seasoning ingredients.
  • Season the fish generously inside and out with fragrant dill, thyme, and a sprinkle of salt. Fill each fish with savory onion slices, add a dash of freshly ground pepper on top, and place a zesty lemon slice on each fish.
  • After baking in the preheated oven for 10 minutes, carefully add hot water to the dish. Then, bake the fish for an additional 10 minutes or until it flakes easily when pierced with a fork.
  • Garnish with fresh herbs and savor while still warm!
