Delight the whole family with these kid-friendly fruit slices!
Ingredients:
  • 150.00 gm self-raising flour
  • 125.00 ml plain flour
  • 65.00 gm custard powder
  • 24.00 gm icing sugar
  • 125g butter, cubed, chilled
  • 40.00 gm iced water
  • 425g canned pie apple (see variation)
  • 250.00 ml dried fruit medley or mixed dried fruit
  • 2.50 gm mixed spice
  • icing sugar, for dusting
Instructions:
  • Preheat your oven to 180°C and prepare a baking tray by lining it with parchment paper.
  • In a food processor, blend together the flours, custard powder, and icing sugar for 20 seconds until fully incorporated. Then add butter and process until it forms fine breadcrumbs. Finally, add the egg and water and continue processing until a ball of dough forms.
  • After mixing the dough in the food processor, gently knead it until smooth, then divide it into two halves. Flatten each half into a 2cm-thick disc, wrap them in greaseproof paper, and let rest in the fridge for 20 minutes.
  • Roll out the pastry into a 26cm square and place one piece onto the prepared tray.
  • Mix together the sliced apples, assortment of fruits, and mixed spices. Spread the mixture over one sheet of pastry, making sure to leave a 1cm border. Top with the second sheet of pastry and firmly press the edges together.
  • Bake until the pastry is firm and lightly golden, around 40-45 minutes. Allow to cool for 10 minutes, then cut into squares and dust with icing sugar. Enjoy with clotted cream or ice cream, if desired.
