Elevate baked halibut with savory Italian veggies and tangy feta topping.
Ingredients:
  • 1 teaspoon olive oil
  • 1 cup diced zucchini
  • 0.5 cup minced onion
  • 1 clove garlic, peeled and minced
  • 2 cups diced fresh tomatoes
  • 2 tablespoons chopped fresh basil
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 4 (6 ounce) halibut steaks
  • 0.33333334326744 cup crumbled feta cheese
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C) and give your shallow baking dish a gentle greasing.
  • In a medium saucepan, heat olive oil over medium heat. Add zucchini, onion, and garlic, and cook for 5 minutes until tender. Remove from heat and stir in tomatoes, basil, salt, and pepper.
  • Place halibut steaks side by side in the baking dish. Spread the zucchini mixture evenly over each steak and then sprinkle with feta cheese.
  • Bake in the preheated oven for 15 minutes, or until the fish flakes easily with a fork.
