Baked halibut steaks topped with sauteed veggies for a delicious, nutritious meal with minimal prep.
Ingredients:
  • 1 tablespoon olive oil
  • 1 small onion, halved and thinly sliced
  • 0.5 bell pepper, sliced thinly
  • 8 ounces sliced fresh mushrooms
  • 1 clove chopped fresh garlic
  • 2 medium zucchini, julienned
  • 6 (6 ounce) halibut steaks
  • 0.5 teaspoon dried basil
  • 0.5 teaspoon salt, or to taste
  • 0.5 teaspoon ground black pepper
  • 1 medium tomato, thinly sliced
Instructions:
  • Preheat the oven to a toasty 400°F (200°C).
  • In a skillet over medium heat, sauté onion, bell pepper, mushrooms, garlic, and zucchini in olive oil. Cover and cook, stirring occasionally, until onions are translucent, about 5 minutes.
  • Arrange halibut steaks in a shallow baking dish and generously top with the flavorful sauteed vegetables. Sprinkle with a perfect combination of fragrant basil, salt, and pepper for an exquisite taste.
  • After baking for 10 minutes in the preheated oven, add a layer of sliced tomato on top of the fillets. Bake for an additional 10 minutes, or until the fish flakes easily with a fork.
