Golden, crispy cakes made from mashed potatoes, ham, and fresh chives.
Ingredients:
  • 3 pounds Yukon Gold potatoes
  • 1 cup diced onion
  • 8 tablespoons butter, softened, divided
  • 0.25 teaspoon freshly ground black pepper
  • 2 eggs, lightly beaten
  • 1.5 cups Smithfield Ham slices, diced
  • 0.25 cup fresh chives, chopped
  • 0.75 cup bread crumbs
  • 1 cup shredded Parmesan cheese
Instructions:
  • Preheat the oven to 400 degrees F. Peel the potatoes if desired. Place them in a large saucepot and cover with cold water by 1 inch. Bring to a boil, then simmer for 30-35 minutes until the potatoes are tender.
  • In a skillet over medium-high heat, melt 2 tablespoons of butter and sauté the onion for 10-12 minutes until soft and translucent. Drain the potatoes thoroughly and transfer to a large bowl. Add the remaining butter, salt, and pepper. Mash the potatoes with a mixer or potato masher until combined with a slightly chunky texture. Gently mix in the cooked onion, eggs, ham, and chives.
  • Prepare baking sheet by lining it with parchment paper or lightly greasing it. Use a ring mold or biscuit cutter to sprinkle bread crumbs on the bottom, then fill the mold with potato mixture until slightly rounded on top, topping with more bread crumbs. Remove the mold and repeat with the rest of the potato mixture, leaving about 1 inch of space between cakes. Bake for 20-30 minutes until the tops are golden brown and beginning to crisp. Finish off by sprinkling Parmesan cheese on top and serving hot.
