Whip up quick and adorable personal pasta bakes for an easy dinner in under 30 minutes.
Ingredients:
  • 140g (2 cups) spiral pasta
  • 100g 97% fat-free traditional smoked leg ham, cut into 1cm thick strips
  • 150g bought marinated chargrilled capsicum, sliced
  • 40.80 gm mascarpone
  • 120g (1 cup) light shredded 25 per cent less fat mozzarella
  • 40.00 ml chopped fresh chives
Instructions:
  • Preheat your oven to 200°C. Boil the pasta in salted water according to package instructions until al dente. Drain and return to the pan.
  • Gently combine the ham, capsicum, and mascarpone with the pasta. Season with salt and pepper.
  • Divide the pasta mixture evenly among four 310ml (1 1/4-cup) capacity ovenproof dishes and generously top with mozzarella. Bake in a preheated oven for about 10 minutes, or until the cheese is perfectly melted and bubbly.
  • Upon removing from the oven, generously sprinkle with freshly chopped chives and season with a pinch of black pepper. Serve promptly to enjoy at its best.
